This is SUPER simple and a fantastic way to end a meal, sitting outside under the stars on a warm summer night!  Enjoy!

DESSERT: Strawberry Mango Salsa
serves 6 plus leftovers to store
Strawberry_mango_salsa_supplies INGREDIENTS:
carton of red, ripe strawberries
one perfectly ripe mango
fresh mint
Homemade style vanilla ice cream (my personal favorite is Breyer's Homestyle Double Churned Vanilla)

..........................................................................
Strawberry_mango_salsa INSTRUCTIONS:
1. Finely chop strawberries & mango.  Mix in small bowl.  Chill for at least 2 hours to allow flavors to meld.
2. To serve, scoop vanilla ice cream into serving dishes.  Add 2-3 spoonfuls of salsa on top.  Garnish with mint sprig.

Mmm... looks and sounds yummy!

Oh man, that looks soooo good! Considering its the middle of winter here and freezing, I am soooo jealous of your yummy summer food!!

yum!! thanks for sharing.

This sounds yummy and very similiar to a recipe that I have. The recipe that I have inclues kiwi and some apples too and then you serve it with tortillas toasted in the oven with cinnamon and suger. Then you break up the toated tortillas and serve them like sweet chips. It's delicious!

OMGoodness, that looks so yummy! It was so nice to meet you this weekend, Nichole! CHA was awesome - can't wait till the next one! :)

Nicole, all your recipes are making me hungry! It was great to meet you this past weekend.

that sounds soooo yummy! I bought mangoes on sale last week to make Anna Wight's mango/strawberry slush. We will have to try this too!
TFS!

This looks very yummy!!

YUM-O!! Can't wait to get my hands on some fresh mango and try this out!!

This looks amazing and so easy and I am sure so tasty. I have always wanted to know how to use mangos, don't they have a pit? Do you just cut into it and use what you want? Thank you for sharing. I will have to try it.

I am sooo going to try this when I get home. Thanks for sharing the yummy recipes lately.

yummmmmmmmmmmmmm!!! i have mangoes.. now only need to buy strawberries!

I really did make this last nite. Oh My!!! It was soooo yummy! Thank you for sharing! This is definitely going in our recipe box. Even my boys (and nephew staying with us) loved it!! (two of them are very picky Ü)

Thanks for sharing all your recipes!!! I can't wait to try them!

I just could not wait to tell you that I saw this recipe Saturday morning, bought the strawberries and mango Saturday afternoon, cut everything up Saturday eve and served it Sunday afternoon at a party!! YUM! YUM! Thanks :)
